    Default Nippon Denso motor connector

The FIRST Guidelines, Tips and Good Practiced documents suggests the use of a Packard connector or two alternative connectors. Since we don't have access to any of those, are we allowed to cut/remove a bit of the plastic housing in order to solder two wires to the motor's posts?

Yes. This would be considered a necessary step to enable a permitted modification to the motor, as noted in the third bullet of Rule <R36>.
